How Extra Virgin Olive Oil Is Made
A clear, step-by-step guide to how extra virgin olive oil is made in Australia, from autumn harvest to bottling, with no heat and no solvents.
Extra virgin olive oil is made by mechanical means only. Olives are harvested, washed, crushed to a paste, slowly mixed, then spun in a centrifuge to separate the oil. No heat and no solvents are used. That is the whole method, and it is what makes the oil “extra virgin” rather than a lower grade.
The steps below follow the fruit from the grove to the bottle. Each one matters, and time is the thread running through all of them.
Harvest
Australian olives are harvested in autumn, roughly April to July. The exact window depends on the region, the season and the style the producer wants. Fruit picked earlier gives a greener, more peppery oil with higher antioxidants. Fruit picked later gives a milder, riper flavour.
Speed is everything at this stage. Good producers press the fruit within hours of picking. Olives are living fruit, and once off the tree they begin to break down. A delay of even a day can raise acidity and dull the flavour. Large groves use mechanical harvesters that shake the fruit onto catch frames, which keeps volumes high and the time to press short.

Wash and clean
At the mill the olives are cleaned first. Leaves and twigs are blown out, and the fruit is washed to remove dust, grit and any spray residue. Clean fruit protects the flavour and the equipment. This is a quick step, but skipping it would leave off notes in the finished oil.
Crushing
The washed olives are crushed whole, stones and all, into a thick paste. Most modern Australian mills use a hammer or disc crusher that breaks the fruit apart fast. Crushing the stone is fine and even helps, because it releases natural compounds that support flavour and shelf life.
The result is a paste of pulp, skin, crushed stone and tiny droplets of oil. At this point the oil is locked inside the paste and needs to be coaxed out.
Malaxation
The paste is slowly mixed, or malaxed, for a set time. This gentle stirring lets the small oil droplets join into larger ones that can be separated. Malaxation is where a miller earns their keep. Mix too briefly and yield suffers. Mix too long or too warm and the oil oxidises and loses freshness.
Temperature is the key control. To keep the label “cold extraction”, the paste is held below about 27 degrees Celsius. No outside heat is added to chase a higher yield, because heat would strip out the delicate aromas and the antioxidants that define good extra virgin oil.
Separation by centrifuge
The malaxed paste is fed into a horizontal centrifuge called a decanter. Spinning at high speed separates the mixture by density into three parts: oil, water and the solid pomace. The decanter does in seconds what gravity would take days to do.
The oil then usually passes through a second, vertical centrifuge for a final polish that removes the last traces of water and fine solids. This whole process is mechanical. Nothing is dissolved out with chemicals, which is exactly what separates extra virgin oil from refined seed oils.

Filtering and storage
Fresh oil comes off the centrifuge slightly cloudy, carrying tiny bits of fruit and water. Many producers filter it to remove that sediment. Filtered oil is more stable and keeps longer, because leftover moisture and solids can ferment and spoil flavour over time. Some producers sell unfiltered oil for its fuller taste, but it should be used quickly.
The finished oil is stored in stainless steel tanks, often blanketed with inert gas and kept cool and dark. Oil’s main enemies are heat, light, air and time. Careful storage before bottling protects the oil until it reaches you.
Why “extra virgin” is about method
Extra virgin is a grade, not a marketing word. It is earned by how the oil is made and by testing against a standard. In Australia that standard is AS 5264 (2011), and the Australian Olive Association runs a certification program that checks oil against it. Oil that meets the chemistry limits and passes a taste panel with no defects can be called extra virgin.
Because it is defined by method and quality, extra virgin oil never involves heat treatment or solvents.
